Panchmel dal

Panchmel dal as the name suggests is a combination of 5 different dals, which are cooked along with some spices and flavoured with Sarda Farms ghee. This protein packed, spicy, no-onion/garlic dish is the perfect accompaniment for rice or roti. This recipe uses a readymade multi dal mix which is easily available in most grocery stores in India. You can alternatively mix individual dal and cook as instructed.

 

 

 

Ingredients

  • 1 cup ‏Mixed dals /lentils (chana, toovar, moong, urad, masoor)
  • 2-3 tablespoons ‏Sarda Farms ghee
  • ½ teaspoon ‏Turmeric powder
  • 1 teaspoon ‏Red chilli powder
  • 1 teaspoon ‏Garam masala
  • 2-3 ‏Cloves
  • 1 teaspoon ‏Cumin seeds
  • 1 ‏Tejpatta
  • ½ -1 teaspoon ‏Amchur powder (dried mango powder)
  • 2 ‏Green chillies, slit
  • ¼ teaspoon ‏Hing (asafoetida)
  • ‏Salt to taste
  • 2-3 ‏Cups of water
  • ‏Chopped coriander leaves for garnish

Method

Pressure cook the dal with 2- 2 ½ cups of water, turmeric powder and few drops of ghee till soft (about 2 whistles and 20 minutes on SIM)

In a pan, heat 2 tablespoons ghee.

Add the cumin seeds, cloves, green chillies and tejpatta .

Mix the garam masala,red chilli powder,hing in a tablespoon of water and mix.

Carefully add it to the ghee and saute for a few seconds on low heat

Add the cooked dal and stir.

Adjust consistency by adding little more water if you like.

Sprinkle the amchur powder, salt and mix well.

Cook for 4-5 minutes on low flame

Serve hot garnished with coriander leaves and 1-2 teaspoons of ghee (optional)
