Nagli Ambil (Ragi Porridge)

Ingredients

  • 1-2 ‏tablespoons Nagli (Ragi/finger millet) flour
  • ¼ ‏cup Sarda Farms dahi
  • ¼ ‏teaspoon hing
  • ¾ ‏teaspoon cumin seeds
  • ‏Salt to taste

Method

Heat 3 cups water in a pan.

Add hing, cumin seeds and salt to it.

Mix nagli flour with little water and make a slurry. Stir well to remove lumps.

Bring the water to a boil and simmer.

Gradually add the slurry and stir the mixture continuously to avoid lump formation.

Cook for about 2 minutes till the mixture thickens, stirring all the time.

Take the pan off the heat and cool completely to room temperature.

Whisk the dahi with some water.

Mix it with the ambil (porridge) and serve immediately or chill for 30 minutes before serving.

Notes

Adjust the proportion of Nagli flour and water according tto the desired consistency. About 1 ½ tablespoons flour mixed with 3 cups gives it a porridge like consistency.

For a variation, you can top the porridge with sunflower,sesame or water melon seeds

To serve it as drink use less flour. The drink can be garnished with coriander leaves and chopped onion.
