Kesar (saffron) Phirni
Wholesome, fresh Sarda Farms milk is thickened with ground rice and then infused with a delicate saffron flavour to make this rich, scrumptious Kesar Phirni. Dry fruits and nuts enrich the indulgent dessert which can be served hot or cold. You can alternatively flavour Phirni with cardamom,rose syrup, mango or any other fruit puree.
- 1 litre Sarda Farms milk
- 4-5 tablespoons rice, soaked in water for 2 hours
- ½- ¾ cup sugar (as required)
- 1large pinch saffron strands
- ¼ cup dry fruits and nuts of choice (raisins, almonds,pistachios etc)
Bring the milk to a boil in a heavy bottom pan on medium heat.
Turn the heat to low and simmer till the milk reduces by half its original quantity.
Stir so that it does not stick to the bottom.
Add saffron and sugar and mix.
Grind the rice to a coarse paste. Use little water if required to make the paste.
Gradually add the rice paste to the simmering milk and stir so that lumps do not form.
Cook till the mixture thickens (about 3-4 minutes)
Take it off the heat and cool.
Kesar Phirni can be served warm or chilled, garnished with dry fruits and nuts
The amount of ground rice can be adjusted to get the desired consistency of Kesar Phirni. The proportion in the recipe yields a thick but pouring consistency phirni.
