Gluten free Apple and Date fritters

Apple and dates are mixed with a multigrain, gluten free flour mix (Upvas flour mix) and then shallow fried in pure Sarda Farms ghee to make these delectable bites of goodness. Fresh ,natural dahi from Sarda Farms lends a tangy taste to the batter and makes the fritters light. The recipe does not use any added sugar since natural sugar from apple and dates is sufficient to sweeten the fritters. You can drizzle some honey on the fritters or serve them with honey to add some extra sweetness.

 

Ingredients

  • ¾ ‏cup gluten free flour mix (Upvas flour mix)
  • 1 ‏teaspoon Sarda farms ghee, melted + as required for shallow frying
  • 1 ‏large apple, cored, peeled and chopped or grated
  • 8-9 ‏dates seeds removed and chopped
  • ¼ ‏teaspoon cinnamon powder
  • ½ ‏teaspoon baking soda

Method

Mix together the flour, cinnamon and soda in a mixing bowl.

Whisk dahi with about ¼ cup water.

Add it to the flour to make a thick batter (dropping consistency).Add more water if required to get the right consistency.

Add the melted ghee, apple and dates to the batter and mix.

Heat a non-stick appe (paniyaram/aebleskiver) pan on low flame.

Drizzle few drops of ghee in each cavity.

Drop a spoonful of batter in each cavity.

Cover and cook on low heat till the bottom browns well.

Use a wooden skewer to gently turn the fritters and cook on the other side.

Carefully take out the fritters from the pan with the skewer and repeat the above steps for the rest of the batter.

Serve hot with honey (optional)
