Gajar (carrot) Halwa
One of the most popular sweets across India, Gajar halwa is a classic dessert made by slow cooking fresh red carrots with milk. Additive free Sarda Farms milk and ghee made using traditional methods, add to the richness of this traditional dessert.
- 1 kg fresh red carrots, trimmed, peeled and grated
- 1 litre Sarda Farms milk
- 4-5 tablespoons Sarda Farms ghee
- 2 ½ - 3 cups sugar (or as required)
- ¼ teaspoon grated nutmeg (you can also use powdered cardamom)
- Pinch of saffron strands
- ¼ cup dry fruits and nuts of choice
Heat 2 tablespoons ghee in a heavy bottom pan on low flame.
Add the dry fruits and nut and fry till they turn golden.
Take them out on a plate.
Add carrots to the pan and sauté for 1 minute.
Add 2 cups milk.
Cook on low flame till the milk almost evaporates. Stir in between so that the mixture does not stick to the bottom of the pan.
Add the rest of the milk, nutmeg, saffron and cook till the carrots turn soft and most of the milk has evaporated.
Add sugar and the remaining ghee.
Stir and cook again till most of the liquid has evaporated.
Take the pan off the heat and then add the fried dry fruits and nuts. Mix.
