Foxnuts (Makhana) & Potato stir fry

Enjoy the nutritious goodness of Foxnuts (Makhana/lotus seeds) with this simple Foxnut & Potato stir fry. Foxnuts are tossed with boiled potatoes and tempered with spices in earthy, flavourful Sarda Farms ghee, to make this quick stir fry. Foxnuts (Makhana) & Potato stir fry makes for a scrumptious snack or a light meal in itself.


  • 2-3 ‏medium sized potatoes, boiled, peeled and chopped
  • 1 ‏cup Foxnuts (Makhana)
  • 2 ‏tablespoons Sarda Farms ghee
  • 1 ‏teaspoon cumin seeds
  • 1-2 ‏green chillies, chopped
  • ½ ‏teaspoon coriander powder
  • ¼ ‏teaspoon chaat masala (optional)
  • ‏Salt to taste
  • ‏Lime juice as required


Melt 1 tablespoon ghee in a non-stick pan on low flame.

Add the foxnuts and roast them on low flame till they crisp up and release their typical aroma. (1-2 minutes)

Take them out on a plate.

In the same pan heat remaining ghee.

Add the cumin seeds and once they sizzle, add green chillies and sauté for a few seconds.

Add the potatoes and stir fry for a minute.

Toss in the foxnuts, coriander powder and mix well.

Serve immediately garnished with chaat masala (if using) and drizzled with lime juice.
