Bhutte Ka Kees
Bhutte (Corn) ka Kees is a popular street food, especially during the rainy season. Crushed, spiced corn is simmered in milk to make this quick, spicy snack.
Additive free Sarda Farms milk gives a creamy texture to the dish.
- 1 cup fresh corn kernels
- ½ - ¾ cup Sarda Farms milk
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- ½ teaspoon cumin seeds
- ¼ teaspoon hing (asafoetida)
- 3-4 green chillies, chopped
- 10-12 curry leaves
- 1 teaspoon grated ginger
- 2 tablespoon fresh coconut, scrapped
- Salt to taste
- Fresh coriander leaves for garnish
- Juice of ½ lime (optional)
Crush the corn kernels in a blender to a coarse paste.
Heat oil in a pan on medium flame.
Add the mustard seeds.
Once they crackle, add the cumin seeds, chillies, hing, curry leaves, ginger and sauté.
Add the corn paste, salt and stir to blend.
Add milk, stir and simmer till the mixture thickens.
Serve hot garnished with coconut, coriander leaves and lime juice (if using)
