Besan (Chickpea flour) Ladoo

Besan Ladoo, a traditional Indian sweet, makes for a delicious festive treat and also doubles up as a snack for ever-hungry kids.

A delightful, nutty aroma wafts through the kitchen as you roast besan in additive free ghee from Sarda Farms ghee. The recipe is pretty simple, all you need is some patience to make the heavenly bites of goodness.

 

     

Ingredients

  • 3 ½ cups ‏Besan/Chickpea flour (coarsely ground)
  • 1 cup ‏Sarda Farms ghee
  • ~ ½ cup ‏Sarda Farms milk (or as required)
  • ½ -¾ cup ‏powdered sugar
  • 1 large ‏pinch saffron
  • ½ teaspoon ‏nutmeg powder (or cardamom powder)
  • ‏Handful of raisins (kismis)
  • 2 tablespoons ‏chironji (or any nut of choice)

Method

In a heavy bottom pan melt ghee on low heat.

Add besan and stir.

Roast on low flame till you get the distinct aroma and the colour starts changing to light brown. Stir constantly to prevent it from burning. This takes approximately 10-12 minutes.

Take it off the heat.

Add the saffron to the milk and stir.

Carefully add the milk to the roasted besan. The mixture will bubble up and then solidify so take care not to burn yourself.

Mix and then add the powdered sugar, chironji and some raisins.

Mix well ad allow it to cool slightly.

While the mixture is still warm, using your hands, shape small portions of the mixture into lime sized balls. Press 1 raisin on the surface of the ladoo,just for good presentation.

Cool completely and store in airtight container.

Note:

This recipe uses coarsely ground besan to add texture to the ladoo, but you can also use finely ground besan.
