Apple Clafoutis

Clafoutis is a classic French dessert where fruit is arranged in a baking dish/pan, covered with a thick batter and then baked. Traditionally cherries are used to make Clafoutis but you can use any other berry or apples, pears etc. Apples are easily available all year round so this Apple Clafoutis can be made anytime. Fresh Sarda Farms ghee replaces butter and lends a rich flavour to the Apple Clafoutis while milk enriches the taste. This recipe uses whole wheat flour to amp up the nutritional value of the dessert, you can use Maida (all purpose flour) instead.



  • 2 ‏crisp apples (green or red), cored and sliced
  • 3 ‏tablespoon Sarda Farms ghee
  • 4-5 ‏tablespoons powdered jaggery/brown sugar or white sugar
  • 7-8 ‏walnuts, chopped
  • ½ ‏teaspoon baking powder
  • 2 ‏eggs, whisked
  • ¾ ‏cup Sarda Farms milk
  • ¼ -1/2 ‏teaspoon nutmeg (or use 1-2 teaspoons vanilla extract)
  • ½ ‏cup whole wheat flour



Pre-heat oven to 160 degree Celsius

Melt 1 tablespoon ghee in a pan on low heat.

Place the sliced apple and sprinkle ½ of the jaggery & nutmeg powder over it.

Cook the slices on both sides for about 1-2 minutes till they soften.

Arrange the slice in the base of a greased tart pan/baking pan.

Sprinkle the walnuts all over the slices.

In the jar of a blender add eggs, remaining jaggery, leftover nutmeg, baking powder,ghee,flour and milk. Blend to make a thick batter.

Pour the batter over the apple slices.

Place the pan on a baking sheet and place it in the oven.

Bake for about 20-25 minutes till it turns light brown .

Serve on its own or with a scoop of icecream.
