Ajwain leaf (Indian borage) raita
Ajwain leaf (Indian borage or doddpatre or ova) is a medicinal herb with many healing benefits. The low maintenance herb can be easily grown in your kitchen garden and can be used in making dals, rice, salads etc. Healthy Sarda Farms dahi is flavoured with these aromatic leaves to make this nutritious raita. You can make a similar raita with coriander leaves, curry leaves or ginger.
- 10-12 ajwain leaves chopped
- 1/3 cup Sarda Farms dahi (or as required)
- 2 tablespoons fresh scrapped coconut
- 4-5 peppercorns
- 1 teaspoons cumin seeds
- Salt to taste
For the tempering:
- 2-3 teaspoons ghee
- 1 teaspoon mustard seeds
- 1-2 red chillies
Heat 1 teaspoon ghee in a pan.
Add cumin seeds, peppercorns and ajwain leaves.
Sauté for few minutes till the leaves just become soft.
Add coconut and stir.
Take pan off heat and cool.
Blend the mixture to a fine paste. Use 1-2 tablespoons of dahi if required.
Whisk dahi and salt in a bowl and add the ajwain leaves paste.
Heat the remaining ghee in a small pan and add the mustard seeds.
Once they splutter add the red chillies and pour the terming over the raita.
Mix and serve immediately or chill for 30 minutes.
